Classic Chicken Divan

This dish was a staple in my house growning up. My mom would make it one or twice a month.

Ingredients

Chicken Divan:

  • 1 Broccoli Heads
  • 1/3 Cup Butter
  • 1 Packet Chicken Gravy
  • 2 Tablespoons Cornstarch Slurry
  • 2 Cups Chicken Broth
  • 1/2 Cup Whipping Cream
  • 4 Tablespoons Dry White Wine
  • 4 Chicken Thighs Cooked and Shredded
  • 1/2 Teaspoon Salt
  • Dash of Pepper

 

Bread Crumb Topping:

  • 1 1/3 Cup Italian Bread Crumbs
  • 1 Stick Butter

Step by Step Instructions

Step 1

Cut broccoli into bite-sized florets. Steam broccoli for 3 minutes. Then toss in a ice bath. Once cold drain and let stand to thoroughly dry. 

Step 2

Melt 1⁄3 cup butter, and slowly whisk in 1 packet of chicken gravy to make a roux. Add 1⁄2 tsp salt and pepper.

Step 3

Add 2 cups chicken broth and cook over moderate heat, stirring constantly, pour in cornstarch slurry until sauce thickens
and bubbles. Stir in 1⁄2 cup whipping cream and 4 tbsp white wine. 

Step 4

Place broccoli and cooked shredded chicken in a baking dish ( 2-1/2 qt-2.3L). Pour roux all over. 

Step 5

Melt 1 stick of butter in a saucepan. Add 1 1⁄3 cup Italian breadcrumbs. Mix with fork until all blended. Put on top of divan then bake. Bake at 350° for 20 minutes. I wait until it’s bubbling in the middle before pulling out.

Quick Tips

To save time use rotisserie chicken.

We like serving chicken divan over white rice.
