Chicken Liver Pate
Chicken Liver Pate is perfect for entertaining, it will add a touch of class to your dinner party or special gathering. I personally it make every Christmas.

Ingredients
Chicken Liver Pate:
- 1 Pound Chicken Livers
- 1 1/2 Sticks of Butter Cubed
- 2, 14.5 Ounces Cans Chicken Broth
- 1/2 Yellow Onion Minced
- 1 Cup Parsley Minced
- 1 Can Anchovies Chopped
- 1/8 Cup Capers
- 2 Garlic Cloves Minced
- 1/3 Cup Brandy
- 1, 8 Ounces Package Cream Cheese
- 1 1/2 Tablespoons Olive Oil
- Ritz Crackers or Baguette
Garnish:
- Sliced stuffed green olives (optional)
Step by Step Instructions
Step 1
Cut chicken livers in half and clean all the fatty tissue off.
Step 2
Heat 1 1⁄2 tbsp olive oil on medium heat in a large sauté pan. Once the pan is hot sauté chicken livers until slightly browned. Add 1⁄2 onion minced, 2 garlic cloves minced, 1 1⁄2 sticks of butter cubed, and 1 cup parsley minced. Sauté together until vegetables are cooked.
Step 3
Add 1⁄8 cup capers, 1⁄3 cup brandy, and 1 can of anchovies chopped. Reduce heat and continue to cook, mashing all ingredients together with a fork. Once cooked down, add one 14.5 oz can chicken broth and continue to mash…cook all the
moisture out and then add the second 14.5 oz can of chicken broth.
Step 4
Continue to mash ingredients and cook until the moisture is gone. Put aside and let cool. Once cool, place in a blender and add 1, 8 oz pkg cream cheese. Blend mixture until smooth then
place in the refrigerator to cool.
Step 5
Spread pate on crackers or sliced baguette add a slice of green olive on top if you like. Really tasty on Ritz crackers.
Quick Tips
Have the cream cheese at room temperature. I buy the whipped cream cheese but you can also use the block.
The cream cheese cuts metallic taste from the chicken liver and helps smooth out the pate.
I prefer garlic stuffed green olives sliced on top.
