Ingredients
Miso Black Cod Marinade:
- 1 Cup White Miso Paste
- 1/2 Cup Mirin (Japanese rice wine)
- 1/2 Cup Sake
- 1 1/2 Teaspsoons Wasabi Paste
- 1 1/2 Tablespoons Fresh Ginger (graded)
- 1 1/2 Tablespoons Granulated Sugar
- 1/3 Cup Olive Oil
- 2 1/2 Pound Balck Cod Fillet
Step by Step Instructions
Step 1
In a medium-sized mixing bowl, add 1 cup white miso paste, 1/2 cup mirin, 1/2 cup sake, 1 1/2 teaspoons wasabi, 1 1/2 tablespoons ginger, 1 1/2 tablespoon sugar and 1/3 cup oil. Whisk until it’s very smooth and the pour the mixture into a large zip-lock bag. Add the fish, remove all the air from the bag, and seal it. Make sure all of the fish is well-coated. Then place it in the refrigerator overnight up to 3 days.
Step 2
Remove the fish from the refrigerator, and place on a foiled covered baking sheet. Adjust the rack under the broiler so the fish will be a few inches from the flame. Remove the fish from the bag, letting any excess marinade drip off. Place the fish on the foil-covered baking sheet. Place the baking sheet under the broiler on low until the fish has nicely caramelized on top. It should take about 20 minutes. Use a fork to check doneness. Once the fish flakes apart, its done.
Quick Tips
You can server with rice or noodles. I like it with roasted veggies.
Make sure to keep and eye on the cod to not burn it under the broiler
